Located on the rugged north-eastern shores of Islay, Caol Ila Distillery has been producing exceptional Scotch whisky since 1846. Overlooking the Sound of Islay, the distillery’s name translates to "Sound of Islay" in Gaelic, a nod to its stunning coastal location. Known for its distinctive balance of peat smoke and maritime freshness, Caol Ila’s whisky has long been prized both as a single malt and as a key component in some of Scotland’s most famous blends. This single cask release from Stillwater Whisky Co, one of just 424 bottles, was distilled in 2016 and matured in a first-fill Palo Cortado hogshead, an exceptionally rare type of sherry cask that adds unparalleled depth and complexity to the whisky. Palo Cortado is the rarest style of sherry, occurring by natural, spontaneous transformation when the protective ‘flor’ yeast fails to form on sherry intended to become Amontillado, allowing oxidative ageing to take over. This unique process results in a sherry that combines the aromatic delicacy of Amontillado with the richness and body of Oloroso, making it highly prized for whisky maturation. The elegant and nutty characteristics of Palo Cortado contrast beautifully with Caol Ila’s signature peaty phenols, creating a whisky that is both smoky and sophisticated, with layers of maritime salinity, dried fruit, and warming spice. Bottled at a robust 51.6% ABV, this release is presented without chill filtration and in all-natural colour, ensuring a pure and unaltered tasting experience.
